- 1.33 lbs boneless skinless chicken breast (cut into 16 strips)
- Salt and pepper
- 1/2 cup panko breadcrumbs
- 1/2 cup unsweetened shredded coconut
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 2 U eggs, beaten

Instructions
(Hide Photos)Season the chicken with salt and pepper. On a plate, mix together the panko breadcrumbs, coconut, brown sugar, and garlic powder. Place the eggs in a shallow dish next to the plate of breadcrumbs. Dip each chicken strip into the eggs and let the excess drip off. Then dredge the chicken strip in the coconut breadcrumbs. Place each chicken strip on the prepared baking sheet.
