This beef is really special. I first saw it over on The Pioneer Woman’s website //Links and have made it multiple times for game-days, get-togethers, and as a base for multiple meals throughout the week. The idea is so simple slow cooker beef with pepperoncinis, onions, and a touch of Italian seasoning and the outcome is better than anything you could imagine. It’s terrific on sandwiches, over rice, turned into a quick beef stew, stuffed in peppers. You get the idea. I think it would taste good in just about anything.

Ingredients

  • 2 lb lean beef eye round roast
  • 1 U onion, chopped
  • 1 cup beef broth
  • 8 oz pepperoncini with juice, jarred
  • 1/2 tsp salt
  • 3 tbsp Italian seasoning

Instructions

  1. Add everything to the slow cooker. Cook on low for 8 hours.
  2. Shred beef with 2 forks and serve.

Is it very spicy? My husband cannot eat hot/spicy.....so need to check, please, and hope to hear, cause it sounds wonderful to me!

I don’t find it spicy at all. I don’t put the peppers on my sandwich but my guys all do. The pepperoncini add a great flavor without much heat, in my opinion.

Delicious! We ate this on steak rolls toasted under the broiler with a slice of melted provolone cheese. The roll had too many smartpoints (LOL) so I might try the leftovers served over salad greens for lunch. I just joined WW and really appreciate you having the SP figured for each recipe. The slow cooker is a working mom's best friend!

Yum, this was so good and incredibly easy. It shredded with ease and was absolutely delicious.

I used a whole yellow onion, and flipped the roast halfway through. It was perfect and my family loved it.

Loved this recipe- my beef could not be pulled apart with forks but was still good.
