Pork and apples is a classic combination that is kicked up a notch in this simple roasted pork and apple dish. Instead of the classic pairing of pork chops and applesauce, we are going to use a whole pork tenderloin and cook it with apples, onions, and thyme in the oven. The resulting dish is a delicious roasted pork with roasted apples. Some of the apples will break down more than others creating a yummy sauce on the bottom of the pan that can be served over the roasted pork.

  • 1.67 lbs. lean pork tenderloin
  • 1 tbsp. olive oil
  • 1 tsp. salt
  • 1 tbsp. Dijon mustard (or Whole30® approved mustard if needed)
  • 1 tbsp. fresh thyme
  • 1/4 tsp. black pepper
  • 2 U apples, chopped
  • 1 U onion, sliced
  • 1/2 cup low sodium chicken broth

Directions

  1. Preheat the oven to 425 degrees.
  2. Combine the olive oil, salt, mustard, thyme, and pepper. Spread all over pork.
  3. Set in a foil lined baking dish.
  4. Add the apples and onion around the pork and pour in the chicken broth.
  5. Bake for 25-30 minutes or until pork is cooked through.
