Stuffed peppers were something I usually turned my nose at until I recently had some incredible vegan stuffed peppers at a friend's house. She forever changed my opinion of what a stuffed pepper could be. Inspired by her amazing peppers which had lentils and brown rice, I couldn't wait to try this Stuffed Pepper soup with lentils and brown rice. I added some extra vegetables - zucchini and spinach - but you could leave these out or add any veggies you like. And as you may expect, this is delicious with some crumbed feta or goat cheese on top.

Ingredients

  • 1 tbsp. olive oil
  • 1 U sweet onion, diced
  • 4 U cloves garlic
  • 1 U red bell pepper, cored and diced
  • 1 U green bell pepper, cored and diced
  • 2 tsp. Italian seasoning
  • 14 oz. canned diced fire roasted tomatoes
  • 14 oz. canned tomato sauce
  • 1 cup dry lentils, rinsed
  • 4 cups vegetable broth
  • 2 cups water
  • 1 cup cooked brown rice
  • 4 cups spinach
  • 2 U zucchini, chopped

Directions

  1. Heat the olive oil over medium heat. Add the onion, garlic, and peppers. Cook for 4-5 minutes. Add Italian seasoning and stir.
  2. Add the lentils, diced tomatoes with juice, tomato sauce, vegetable broth, and water.
  3. Bring to a simmer and cook for 35 minutes or until lentils are tender. Add the spinach and zucchini. Cook for 4-5 minutes until zucchini is tender. Add cooked brown rice. Season with salt and pepper.
