To create this simple breakfast recipe, you will need the following key ingredients:
- Greek yogurt: Packed with protein and probiotics, this healthy ingredient makes our pancakes extra thick and fluffy. Regular yogurt will also work.
- Flaxseed meal: This low carb alternative to classic flour is made with flax seeds. Flax is a powerhouse when it comes to nutrients packed with vitamins, minerals, and Omega 3’s.
- Eggs: Much like the Greek yogurt, eggs are important in achieving nice, fluffy pancakes. They also act as a binding agent to help hold everything together.
- Blueberries: I like to use fresh blueberries for the warm berry compote, but frozen blueberries work just fine if that’s what you have. Other berries can also be swapped in.
- Stevia: This adds the perfect amount of sweetness to the pancakes and can be substituted for the sweetener of your choice. You can also use honey or maple syrup.
- Vanilla extract: This enhances the flavors of the rest of the ingredients in the pancakes. You definitely don’t want to leave it out!

This dish is great for making in batches because it keeps really well both in the fridge and freezer. Before storing any leftover pancakes, make sure to let them cool down to room temperature first.
