If you’re in need of healthy meal prep recipes, this one makes a great choice! To store fajita vegetables, you will first need to let them cool down to room temperature before transferring them to an airtight storage bag or container. Once properly stored, they will keep in the fridge for up to 4-5 days.

To freeze fajita vegetables, spread them out onto a baking tray and place the tray in the freezer for 30 minutes to an hour. Once frozen, transfer the veggies to an airtight storage bag and freeze them for up to 6 months. When you’re ready to enjoy them, simply reheat the fajita veggies on the stove.

Cut all the vegetables into thin strips. Heat olive oil in a heavy skillet over medium-high heat. Make sure the oil is very hot so that the vegetables get some char and caramelize.
