Creamy cilantro lime yogurt dressing can make all your salad dreams come true. I have been eating more veggies and salads all week just because I love this dressing so much. The idea for this dressing came a few weeks back when a friend brought us dinner and made these delicious taco salads with a homemade cilantro dressing I immediately loved. Since then I have been eating it by the bucket full.
Not into cilantro? I don't really understand that since I love it so much but I know some people really hate it. It's a bit of a polarizing flavor. So if you fall in that camp, make the same recipe with basil and lemon, and wow, it's delicious. I will probably officially share that recipe here as well in a few weeks, but I don't recommend waiting until then. You could mix up the fresh herbs too and make a green goddess style dressing.
Cilantro Lime Yogurt Dressing

- 1 cup cilantro
- 3/4 cup nonfat plain Greek yogurt
- 1 U garlic clove
- 1 U lime, juice
- Salt and pepper
- 2 tbsp. olive oil
- 2 tbsp. white wine vinegar

Add everything to a food processor and pulse until smooth and creamy. Season with salt and pepper.
