Who doesn’t love pizza for breakfast? With these English Muffin Breakfast Pizzas, you can enjoy a protein packed pizza breakfast in less than 10 minutes! Made with just four key ingredients, these kid-friendly mini pizzas make for the ultimate breakfast recipe.

If you’re looking for a healthy breakfast recipe that will have your kids leaping out of bed in the morning, this is the one. Wholesome, easy to make, and beyond satisfying, Breakfast English Muffin Pizzas are the perfect way to start your day.

The first time I made this dish, I was thinking of a childhood friend of mine whose mom used to make the absolute best English muffin pizzas. I’m not even kidding when I say that my mouth watered at the thought of them. As a  second grader, I never believed another breakfast dish could compete with it. I mean, it was pizza for breakfast.

Fast forward to now… As a mother of two who doesn’t always have the best luck getting the girls to finish their breakfast, I knew I had to recreate the infamous recipe. These Breakfast English Muffin Pizzas take just 10 minutes to whip up and are a huge hit with the whole family. They are made with the classic tomato sauce and mozzarella cheese combo, then topped with scrambled eggs for a hearty dose of protein.

This hearty breakfast recipe is perfect for mornings when you are short on time or weekends when you want to spice things up. It’s also a great breakfast on the go like these Breakfast Burritos and Breakfast Tacos.

Key Ingredients

To make these healthy breakfast pizzas, you will need the following key ingredients:

  • English muffin: You can toast the English muffin to your personal preference. Personally, I like it a little crispy and brown around the edges. Yum. Regular, light, whole wheat, or gluten-free English muffins all work and you can also swap in bagels, toast, and low carb bread options. You could even make your own Two Ingredient English Muffins.
  • Eggs: The beauty of this recipe is that it’s super customizable. I prefer to scramble my eggs, but you could fry them or cook them sunnyside up, too. For an even lighter version, you could always opt for scrambled egg whites.
  • Tomato Sauce: Feel free to use any kind of tomato sauce (or store-bought pizza sauce) that you like. If using a store-bought pizza sauce, you may not need as much Italian seasoning. Sliced tomatoes also work.
  • Mozzarella: I prefer to use shredded mozzarella cheese, but you can use any kind of cheese you like. Shredded cheddar cheese works great, too!

Recipe Ideas and Ways to Personalize

Here are some of my top tips and tricks to help you make this dish really shine:

  • Add a protein boost. Eggs are plenty of protein for me most mornings, but I do share a roof with a carnivore (my husband). You can easily top these pizzas with breakfast sausage or crumbled bacon if you’re looking for an extra boost of protein.
  • Add veggies. Looking to clean out the fridge and add extra nutrients? No problem. You can cook some veggies with the eggs or add fresh veggies on top of the pizzas. Some of my top choices include spinach, bell peppers, onions, and mushrooms.
  • Add some butter. I am a firm believer that you can never go wrong with a little butter. Try spreading some over the English muffins before adding the rest of your ingredients. You won’t be disappointed! Pesto is also really tasty.
  • Sprinkle with basil. This might be my favorite part. A sprinkle of fresh basil over the top (or even cooked into the eggs) adds a ton of fresh, delicious flavor that most definitely belongs on a breakfast pizza.
  • Classic toppings: Don't shy away from adding mini pepperoni, dicedd ham, sliced mushrooms, or any other classic pizza toppings. 

What to Serve with Breakfast English Muffin Pizzas

I’ve always found these Breakfast English Muffin Pizzas to be pretty filling, especially if you load them up with extra eggs or veggies. However, if you’re serving this dish as the star of a larger breakfast or brunch, you can pair it with just about anything.

Some of my favorite breakfast side dishes include hash brown potatoes, yogurt bowls, smoothies, and arugula salad.

These minin breakfast pizzas are also a hit for brunch. Just add fruit, breakfast sausage or bacon, and a green salad.

Storage and Leftovers

Looking for the perfect healthy on-the-go breakfast? I’ve got you covered. These mini breakfast pizzas are fantastic for tossing into a plastic bag and running out the door. I always recommend doubling up on the recipe and saving some for later.

  • To store: Seal pizzas in an airtight storage container and refrigerate for up to 3 days. Of course, only if you can keep your family’s hands off of them for that long.
  • To freeze: Make sure they’ve cooled completely, then place them in an airtight storage container or a plastic bag.
  • To reheat: Simply place on a microwave-safe plate and reheat for 1-1½ minutes at a time, until heated through.

Feeding a crowd?

These pizzas can easily be prepped for a crowd. 

  1. Preheat the oven to 450 degrees. Slice the English muffins in half and place them on a baking sheet. Toast in the oven for 4-6 minutes or until lightly toasted and brown. Watch them carefully so they don't burn.
  2. Meanwhile, scramble the eggs in a large skillet until they are just cooked through.
  3. Remove the English muffins from the oven and top them with marinara sauce. Add a layer of eggs to each muffin and top with cheese and any toppings you are using. 
  4. Return to the oven and cook for 3-4 minutes until the cheese melts. You can also broil them at the end for extra toasty cheese. 

Skip the sauce!

Many Breakfast English Muffin Pizza recipes skip the tomato sauce. Although you'll miss some of the classic pizza flavors, you can skip the sauce if you like. Just make sure to spread a thin layer of butter or cream cheese on the muffins so they aren't overly dry.

In my opinion, breakfast pizzas are best enjoyed fresh out of the oven. However, if you want to plan ahead, you can freeze the leftover pizzas and reheat them as needed.

Nope! You can customize this recipe however you want, which means cooking the eggs to your liking. This recipe tastes just as delicious with scrambled eggs as it does with a fried egg on top. You can also mix up the toppings (add protein, veggies, and/or cheese) to suit your flavor preferences.

In a small bowl, beat the eggs with salt and a little bit of water. Add the mixture to a nonstick skillet over medium-low heat and gently push around the eggs from the outsides to the center using a spatula. Large, fluffy curds will begin to form. If you want your eggs even creamier, add milk to the egg mixture in place of water.

Absolutely! These delicious breakfast pizzas will work with bagels, sandwich things, toast, French bread, or you could turn it into a breakfast quesadilla with a flour or low carb tortilla.

A favorite weekday breakfast. I think I have an old version of this recipe saved with no basil and some and sprinkle of red pepper flakes instead of basil but it's still a good one

There was great protein packed into these little pizzas but next time I'm going to kick up the flavor with a spread of some sort on the muffin.
