Around me it is also showing up on countless restaurant menus. After reading lots of recipes, I beg, borrowed, and stole my favorite parts and combined them to create this 3 point version. Ingredients

  • 6 cups watermelon, cubed
  • 3/4 cup crumbled reduced fat feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh mint, chopped
  • 1/2 tbsp olive oil
  • Salt and pepper to taste

Add the watermelon to a large bowl along with the red onion. Gently toss to combine.

Add the feta and mint. Drizzle with olive oil and season well with salt and pepper.
