These just may be my favorite veggie burgers, packed with black beans, jalapenos, red onions, and cheddar cheese, they are seriously yummy. My meat loving husband even loved these burgers and didn't even ask where his version with beef was. Normally I make veggie burgers and beef burgers so that we both are happy. Served with some baked french fries and you would never guess that this is a healthy meal.

Ingredients

  • 1/2 cup rolled oats
  • 14.5 oz. canned black beans, rinsed and drained
  • 1 U egg
  • 1 tsp. ground cumin
  • 1/2 cup reduced fat shredded cheddar cheese
  • 1 U jalapeno, chopped finely (seeded for less heat)
  • 1/4 cup red onion, diced
  • 2 tsp. mustard
  • Salt and pepper

Directions

  1. Add the oats to a food processor and pulse 3-4 times until chopped into smaller pieces. Then add half the black beans and pulse a few times until a thick paste forms. Add the egg and cumin and pulse until well combined.
  2. Remove the mixture from the food processor and add the remaining beans, cheese, jalapeno, red onion, mustard, salt, and pepper. Stir to combine.
  3. Form into patties and refrigerate for 15 minutes to allow the burgers to firm up.
  4. Cook the burgers in a hot skillet sprayed with cooking spray for 3-4 minutes per side, flipping when they brown and crisp up.
