In my opinion, it’s never a bad time for homemade fruit popsicles. Whether it’s hot, cold, rainy, or sunny—popsicles are always a good idea. That being said, there’s nothing quite like enjoying an ice cold popsicle on a hot summer day.

After a long day at the pool, on the beach, hiking up a mountain, or even just hanging around the house, frozen treats like these homemade Fresh Fruit Popsicles make for the perfect way to cool down.

During the summer months when the kids are out of school, it can be a challenge to think of fun ways to keep them entertained. As much as my kids may love riding their bikes and making arts and crafts projects, the idea of making homemade popsicles is always far more exciting to them. These healthy homemade popsicles take just a few minutes to prepare, then all you have to do is pop them into the freezer overnight and enjoy. You can mix and match different fruits depending on what you have at home and what’s in season. Serve these icy treats at pool parties, backyard barbecues, and at the end of dinner parties. There are just two simple components involved in making these delicious treats. To make these homemade popsicles, you will need the following key ingredients:

  • Fresh fruit: I used a combination of raspberries, blueberries, sliced kiwis, chopped pineapples, chopped peaches, and halved cherries.
  • Coconut water: I love the subtle tropical flavor coconut water adds to the popsicles. You can also use plain water, flavored water, or fruit juice.

If you’re looking to change things up, these are some of my favorite variations on this recipe:

  • Use a different liquid base. If you don’t want to use coconut water, you can use regular water, fruit juice, or even leave out the liquid altogether.
  • Make them creamy. To make your popsicles creamy instead of icy, try adding Greek yogurt or coconut milk to the mixture in place of half or all of the coconut water.
  • Add a sweetener. If you prefer your popsicles on the sweeter side, feel free to add a natural sweetener to enhance the sweet flavors of the fruit. Maple syrup, raw honey, and agave all make great choices.
  • Swap out the fruits. I love using an assortment of fresh fruits to make these popsicles, but you can use as many or as little as you want. If you don’t have any fresh fruit, frozen fruit will work as well.
  • Add some citrus. To enhance the flavors of the fruits and brighten up the popsicles, try adding some lemon juice, lime juice, or orange juice.
  • Make them boozy. For an adults-only version, try adding a little rum or vodka to these popsicles for a delicious boozy treat.
  • Add fresh herbs. Try adding fresh basil or mint for some added flavor.

How to Store Homemade Popsicles

Because these treats are already frozen, they keep wonderfully on a long-term basis. You can make as many popsicles at a time as your popsicle molds will allow, so feel free to make a big batch and save some for later.

Layer the fruit in the popsicle mold. Top with coconut water.

Cover the mold and insert the popsicle sticks in between fruit pieces. Pop into the freezer for a minimum of 6 hours (preferably overnight). When ready to serve, put the popsicle mold under running hot water for 5-10 seconds for easy removal of the popsicles.
