There are so many things I love about this recipe. I mean to start - oven baked crispy pork. It's hard to beat. Then the addition of honey mustard and rosemary makes this really special. You can use regular mustard as well and leave out the rosemary depending on your preferences. I like to make up a nice double batch and use the leftovers for salads. Just heat them up in the oven or toaster oven to keep them crispy.

Ingredients

US METRICS
  • 1 lb. boneless, lean pork chops, pounded thin
  • 1 U egg
  • 1 tbsp. honey mustard
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup nonfat milk
  • 1/2 cup breadcrumbs
  • 1/2 tsp. oregano
  • 1/2 tsp. dried rosemary
  • 1 tbsp. vegetable oil

Place the pork between two sheets of plastic wrap and pound until twice the size. Season with salt and pepper.

Whisk together the egg, mustard, salt, pepper, and milk. Spread the breadcrumbs on a shallow dish egg and then into the breadcrumbs.

Heat the vegetable oil over medium high heat. Add the pork and cook for 3-4 minutes on each side or until cooked through.

My first week of Slender Kitchen recipes and loved this one recipe! I made the recipe as written and wouldn't change a thing. It serves 4, so I have leftovers for lunches or dinner -- Perfect!
