If you have never tried baked eggs, you are missing out. They are seriously delicious and can be made with any combination of vegetables, herbs, and cheese. Since tomato, Parmesan, and basil is one of my favorite flavor combinations, I like to bake my eggs in these yummy flavors and then serve some nice bread for sopping up all the goodness. If you decide to use other vegetables or fresh tomatoes, give them a quick saute beforehand until everything is nice and tender. Then layer them in the dish, add the eggs and cheese, and bake. Yum.

Ingredients

  • Cooking spray
  • 28 oz. canned diced tomatoes, drained
  • 1 tbsp. Italian seasoning
  • 8 U eggs
  • 4 tbsp nonfat milk
  • Salt and pepper
  • 1/2 cup Parmesan cheese
  • 1/4 cup basil

Directions

  1. Preheat the oven to 425 degrees.
  2. Add the tomatoes to an 8 X 8 baking dish sprayed with cooking spray. Add Italian seasoning and stir.
  3. Break the eggs into the dish. You can just break them anywhere or use the back of a spoon to make small pockets for each egg.
  4. Drizzle milk on top and season everything well with salt and pepper.
  5. Place in oven and bake for 7-10 minute until whites just begin to look set.
  6. Carefully spread the basil and cheese over top and return to the oven for 2-3 minutes until cheese melts and eggs are cooking to your liking.
