Quiche cupcakes are one of my all time favorite recipes to make. I love the convenience of being able to take them to go and make them with whatever I happened to have at home. While normally I make these with ham, spinach, and mozzarella, this time I decided to go with another of my favorite combos - turkey, broccoli, and cheddar. I think they are delicious hot or cold and they make a perfect portable breakfast, lunch, or snack.

Ingredients

  • 4 U whole eggs
  • 4 U egg whites
  • 2 cups broccoli, diced
  • 1/4 U chopped onion
  • 1 U garlic clove, minced
  • 1/4 cup non fat milk
  • 3/4 lb. deli turkey breast (12 slices)
  • 1/2 cup shredded reduced fat cheddar cheese
  • salt and pepper

Directions

  1. Preheat the oven to 375 degrees and spray a standard muffin tin with non fat cooking spray.
  2. Spray a saute pan with cooking spray and saute the onions until the begin to become translucent. Add the broccoli and garlic and continue to saute until warmed through. Drain any excess liquid.
  3. In a large mixing bowl, whisk together the whole eggs, egg whites, milk, salt, and pepper until frothy. Stir in the broccoli mixture and cheese.
  4. Push the turkey slices into each muffin hole by gently pressing it in the bottom so the turkey creates the crust for the quiche. Try to make sure it isn’t sticking to far over the edge or it will burn during cooking.
  5. Pour the egg mixture into each muffin hole and cook for 20 minutes or until the egg is cooked through and becomes fluffy. These are great warm or cold and will keep well in an airtight container in the refrigerator.

Notes

If you were planning on using these for a quick breakfast or more substantial meal, consider using a 6 cup muffin tin to create larger servings.
