Light Italian Dressing

- 1 U tomato
- 1 U roasted red pepper, drained
- 1/4 cup water
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- 2 tsp Dijon mustard
- 1/4 tsp sugar (or Stevia, agave, honey)
- 1 U garlic clove, minced
- 1/2 tsp oregano
- 1/2 tsp dried parsley
- salt and pepper
Add everything to a blender or food processor and blend until smooth.
