This recipe is seriously easy and seriously delicious. Simple grilled asparagus with a touch of olive oil, salt, pepper, fresh lemon juice, and feta cheese. It tastes great hot or cold which makes it a perfect dish for a summer gathering where meals are enjoyed leisurely without the pressure of serving everything at once. I love those kind of meals. The ones where hours are wiled away with family and friends laughing, talking, and snacking on great food throughout the day. Set this out as an appetizer, salad, or side dish and if you want to make it even more special, wrap the asparagus in prosciutto before grilling.

Ingredients

US METRICS
  • 1 lb. asparagus, stems trimmed
  • 1 tbsp olive oil
  • 1.5 tbsp lemon juice
  • 1 U Salt and pepper, to taste
  • 1/4 cup reduced fat feta cheese

Instructions

  1. Toss the asparagus with olive oil, salt, and pepper.
  2. Grill for about 3 minutes on each side. You can also cook the asparagus in a 400 degree oven for 8-10 minutes.
  3. Toss in lemon juice and top with feta cheese and grilled lemon slices.
