If you're looking for a lighter version of a classic dinner roll, these Two-Ingredient Dough Dinner Rolls are a perfect choice. This two-ingredient dough makes a healthier dinner roll alternative that's full of protein and less carbs than regular rolls. No more frustrating kneading and letting the dough rise in a warm place, you just whip it up and bake.

These homemade dinner rolls are golden brown on the outside, yet soft and fluffy on the inside. When brushed with some butter, they are the most indulgent and delicious appetizer or side dish for all your favorite meals.

Bowls of baking ingredients on a marble surface: melted butter, white flour, and yogurt. The setup suggests preparation for baking.

Before You Get Started

Here are a few helpful notes to read before you make these rolls, so everything turns out soft and fluffy.

  • Use self-rising flour: This combines all-purpose flour, baking powder, and salt, giving the rolls their lift without yeast. You can't use bread flour or all-purpose flour for this recipe!
  • Choose the right yogurt: Nonfat Greek yogurt works perfectly, but full-fat can be used if you prefer a richer roll.
  • Adjust the dough texture: If the dough feels sticky, add a little flour. If it feels dry, add a spoonful of yogurt.
  • Work quickly: This dough doesn't need to rest, so once it comes together, move straight into shaping and baking.

How to Make These Soft Dinner Rolls

Here's how to make these quick, fluffy dinner rolls with no yeast or kneading.

1. Mix the Dough

Combine the self-rising flour and Greek yogurt in a large bowl until a shaggy dough forms. You don't even need a stand mixer!

Pro tip: Add flour gradually if needed so the dough is soft and workable, not sticky.

2. Knead Briefly

Transfer the dough to a lightly floured surface and knead just a few times until smooth.

Pro tip: Stop kneading as soon as the dough comes together so the rolls stay tender.

3. Shape Into Rolls

Divide dough into 8 pieces and roll each one into a ball.

Pro tip: Lightly flour your hands if the dough feels tacky.

4. Arrange and Butter

Place the rolls in a greased pie plate or baking dish so they are lightly touching. Brush the tops with melted butter.

Egg wash: If you prefer to use an egg wash, you can lightly beat an egg and brush it over the top!

5. Bake Until Golden

Bake until the tops are lightly golden brown and the rolls are cooked through.

Recipe Tips and Tricks

Here are some helpful tips to make these two-ingredient dough rolls turn out perfectly every time.

  • Try mini rolls: Divide the dough into 12 pieces instead of 8 for bite-sized rolls.
  • Add a little seasoning. Just a sprinkle of olive oil and garlic powder will give these dinner rolls tons of delicious flavor. You could also try adding Italian seasoning for a little Italian flair.
  • Add some cheese. Cheese and bread were born to be eaten together, so why not melt some cheese on top of your dinner rolls? My go-to choices are Parmesan, feta, or mozzarella cheese.
  • Add protein. Chopped up bacon or sausage adds a delicious bit of protein to these dinner rolls. If you've already added some melted cheese, these rolls instantly become the perfect breakfast sandwiches.
  • Add fresh herbs: Take things up a level with some fresh chopped herbs. Add them directly to the dough.
  • Serve however you like: I recommend pairing these dinner rolls with soup, your favorite pasta dish, or a delicious dinner salad. Alternatively, you can slice them in half and make them into the perfect sandwich buns. Whatever you choose to do with them, you're going to love them!

Storage & Reheating

Here's how to store and reheat your dinner rolls so they stay soft and fresh.

  • Store at room temperature: Keep in an airtight container for up to 5 days.
  • Freeze: Freeze baked rolls for up to 3 months.
  • Reheat: Thaw, wrap in foil, and warm in a 350°F oven for about 10 minutes.

Frequently Asked Questions

Below are some of the most frequently asked questions about this dish:

Sticky dough usually means you need a little more self-rising flour. Add a tablespoon at a time until it becomes soft and workable.

Dry dough needs more moisture, so add one spoonful of Greek yogurt at a time until the dough comes together smoothly.

Yes. Self-rising flour gives these rolls their rise since there's no yeast involved. Without it, the rolls will be dense and heavy.

Absolutely. Just use a larger baking dish so the rolls have enough room to expand while baking.

Hi - We have a dairy allergy in the house - any recommendations on what would be a good replacement for the Greek Yogurt? Would just a dairy free almond milk yogurt work if I can find it in plain? These look so good!!

I know this is late, but if anyone else is wondering the same, you can always use coconut yogurt or mayonnaise.

I love the idea of adding cheese to the top of these. I'm just not sure how to do that - does it get added before baking or part way through the baking process?
