I have a bad habit of burning myself out on certain foods. I find them, I love them, and then I make the mistake of eating them so much that I never want to see them again. Oatmeal was one such food for me. After eating oatmeal for breakfast for a solid 6 months a couple of years ago, oatmeal was something I could rarely bring myself to eat, until last week when I learned to bake it. Baked oatmeal is quick and easy, and adds a whole new dimension to typical oatmeal. It almost becomes an oatmeal bread pudding and the combination of what you can bake in is endless. Not to mention, you can flip it upside down after baking it and take it with you. Sort of like an oatmeal cake of sorts and will turn anyone who doesn’t love oatmeal. It also will keep you full all morning – I usually always need a mid morning snack and don’t when I eat this oatmeal. If you want to lower points eliminate the chocolate chips (1 points).

Ingredients

  • 1/2 cup old fashioned oatmeal
  • 1/4 cup nonfat milk
  • 1/4 cup pumpkin puree
  • 2 tsp brown sugar
  • 2 tsp chocolate chips
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla extract

Directions

  1. Preheat the oven to 400 degrees.
  2. In a bowl, combine all of the ingredients. Spray a small ramekin or other oven safe dish with cooking spray. Pour in the oatmeal mixture.
  3. Bake for 20 minutes. At the end of baking, place under the broiler for 2-3 minutes to crisp up the top. Enjoy!
