BBQ Portabella Quesadillas

These quesadillas are deeelicious, seriously, like pizza and barbecue and quesadillas all wrapped into one. Between the barbecue portabella mushrooms, red onions, and zucchini and the melty cheese I could eat this everyday. Now depending on your tastes and dietary preferences, you could substitute in gouda cheese which would be amazing or you could add some chicken which would be equally delicious. You could also try different mushrooms, use spinach instead of zucchini, you choose your own adventure here. The key though, is to pick a really amazing delicious barbecue sauce.

- 1/2 cup barbecue sauce
- 2 tsp. vegetable oil
- 1 lb. portabella mushrooms
- 1 cups zucchini, diced
- 1 U red onion, diced
- 4 U low carb wraps
- 1 cup shredded part skim mozzarella cheese
- 1/4 cup cilantro

Instructions
(Hide Photos)Heat the vegetable oil over medium heat. Add the mushrooms, zucchini, and onion. Cook until tender, about 6-8 minutes. Turn off heat and stir in barbecue sauce.
Lay out the wraps and sprinkle with 2 tbsp. cheese on one half. Spread the mushroom mixture on top and sprinkle with 2 tbsp. cheese and some cilantro.
Fold and cook the quesadillas for 2-4 minutes per side or until cheese melts.
