Taco Salad

One of my favorite quick weeknight meals is a flavorful taco salad packed with spicy ground beef, beans, corn, cheese, crunchy tortillas, and all the fixings. This simple recipe comes together in a flash and will satisfy any taco cravings without the guilt. I almost always double the recipe for leftovers. Just pack the meat, beans, and corn in a separate container so the salad doesn’t get soggy. You could also wrap the filling inside the tortilla for a healthy burrito if you prefer.

Ingredients

  • 4 2 pt. or 100 calorie flour tortillas or low carb wraps
  • 1 lb. 93% lean ground beef
  • 3/4 tbsp. chili powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. dried oregano
  • 1/2 tsp. paprika
  • 1 tsp. cumin
  • 1/8 tsp. cayenne pepper
  • 1/2-1 tsp. salt
  • 1 tsp. pepper
  • 2/3 cup water
  • 1 cup black beans, drained and rinsed
  • 1 cup drained canned corn
  • Lettuce and chopped tomatoes
  • 1/4 cup cilantro, chopped
  • 4-6 green onions, chopped
  • 4 tbsp. reduced fat shredded cheese
  • Optional: pickles, salsa, sour cream Greek yogurt, avocado, taco sauce, light ranch dressing

Instructions

  1. Preheat oven to 400 degrees.
  2. Place tortillas directly on the oven racks and cook for 6-10 minutes until toasted.
  3. Brown the beef in a skillet over medium high heat.
  4. Meanwhile whisk together all of the spices to make your taco seasoning. Once the beef is browned, add the seasoning to the beef along with 2/3 cup water. Simmer for five minutes. Set aside.
  5. Toss everything together or create four individual salads. Each one should half ¼ of the beef (4 oz., about ½ cup), ¼ cup corn, ¼ cup beans, 1 tbsp. cilantro, 1 tbsp. cheese, and veggies. Serve with crumbled baked tortillas.

    I made a similar version tonight but with cucumber noodles instead of lettuce!! I used my spiraler to make my cucumber into noodles! Ill be posting my recipe Friday!! Love your website it really helps keep me eating healthy even my husband is hooked on your recipes I see him searching for what to cook on here and it makes me smile!
