Baked Pumpkin Chocolate Chip Oatmeal

I have a bad habit of burning myself out on certain foods.  I find them, I love them, and then I make the mistake of eating them so much that I never want to see them again.  Oatmeal was one such food for me.  After eating oatmeal for breakfast for a solid 6 months a couple of years ago, oatmeal was something I could rarely bring myself to eat, until last week when I learned to bake it.  Baked oatmeal is quick and easy, and adds a whole new dimension to typical oatmeal. It almost becomes an oatmeal bread pudding and the combination of what you can bake in is endless.  Not to mention, you can flip it upside down after baking it and take it with you.  Sort of like an oatmeal cake of sorts and will turn anyone who doesn’t love oatmeal. It also will keep you full all morning – I usually always need a mid morning snack and don’t when I eat this oatmeal. If you want to lower points eliminate the chocolate chips (1 points).

Baked Pumpkin Chocolate Chip Oatmeal
Servings: 1
Serving Size: 1 ramekin
Nutritional Info: 254.9calories, 5.3 g of fat, 47.9 g carbohydrates, 5.8 g dietary fiber, 8.3 g of protein * 6 P+

Ingredients
1/2 cup old fashioned oatmeal
1/4 cup milk
1/4 cup pumpkin
1 tbsp brown sugar
1 tsp mini chocolate chips
1/4 tsp pumpkin pie spice
1/4 tsp vanilla extract
Dash of salt

Instructions
1. Preheat the oven to 400 degrees.

2. In a bowl, combine all of the ingredients. Spray a small ramekin or other oven safe dish with cooking spray. Pour in the oatmeal mixture.

3. Bake for 20 minutes. At the end of baking, place under the broiler for 2-3 minutes to crisp up the top. Enjoy!

    Thanks for posting this! My girls and I had it for breakfast this morning. (I tripled it and baked it in a 9×9. Baking time was still perfect.) Yummy!

      Glad you liked it! I have been eating some variation almost every morning. Had it with cut up banana and some chocolate chips this weekend and it was delicious. Also thanks for the information about the baking time for a larger dish – going to add it to the recipe.

    I tried to see how large a ramekin is, and it seems as though you can buy them in many different sizes (ounces) . Do you have a better way of measuring a serving size? I can’t wait to try this!

      The recipe is only one serving, so the whole recipe will be the serving. Also, I just measured the ramekin I use and it holds about a little over a cup of liquid. Hope that helps!

    I made it this morning for me and my husband. He has never eaten oatmeal since I have known him but I convinced him to give it a try. He had to get out the door ahead of me and sent me a text after he ate that said “This oatmeal is amazing!” I agree, and I ate it at about 6:45 this morning and am just now getting hungry for lunch. Any breakfast that keeps me full for almost 5 hours is a keeper!

    I just made this for breakfast. I quadrupled the recipe and made it in a loaf pan. It worked out great! i have breakfast for a couple days now :)

    Oh wow! I was not sure about this seen as I am not a fan of pumpkin pie but I thought I’d give it a go as I love oatmeal.
    It was delicious! Definitely going to be a regular item on my menu… and can’t wait for my fiance to try it too….he’s going to love it!

    I saw this recipe awhile ago, and had been dying to try it for months, but never seemed to have the ingredients and/or opportunity. Finally did today, and it was AWESOME!! Adding this to the growing list of recipes on this site that I love and will be making again. Also made your sesame chicken last night, which everyone loved, and am making the mushroom turkey burgers tonight. Thank you so much for your recipes and this wonderful website! You make it so much easier to stay on plan!

    Tried this recipe this morning as I love both oatmeal and pumpkin. Although I loved the taste I am a little confused about the consistancy. What is it supposed to be? Do you pour milk over it like regular oatmeal?

    Thanks for this recipe! I’m looking forward to trying it. However, when I enter the ingredients into recipe builder (or even enter the stats into the calculator), I come up with 7P+ instead of 6. If you leave out the choc chips, it would be 6.
