Sunday Slow Cooker:  Sausage Gnocchi Soup

I am not sure what it is, but lately chicken sausage is becoming one of my favorite ingredients. I love adding them to stir-frys, bakes, sandwiches, and especially in soups where they add lots of flavor without imparting too much fat. This simple soup combines sausage with potato gnocchi and lots of veggies. I find that the gnocchi can stand up well to slow cooking where some other pastas get too mushy and disintegrate in soup, especially when reheated. I also love how hearty it is. This can also be made stovetop instead of in a slow cooker and freezes great.

Slow Cooker Sausage Gnocchi Soup
Servings: 6

    1 lb. low-fat chicken or turkey sausages, sliced
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery ribs, chopped
  • 4 cups chicken broth
  • 1/2 tsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 20 oz. can diced tomatoes with Italian seasoning or fire roasted
  • 2 cups sliced mushrooms
  • 4 cups kale or spinach
  • 1 10 oz. package gnocchi


  1. Add the sausage, onion, carrots, celery, chicken broth, salt, pepper, diced tomatoes, and mushrooms to a slow cooker. Cook on low for 6 hours.
  2. During the last hour of cooking add the spinach and gnocchi.
  3. Serve with fresh parsley and Parmesan cheese.

    This soup was amazing! I didn’t have gnocchi so I just used red potatoes and let them cook the entire time. My hubby was sick and this was the perfect soup to warm him up! I love that it is chalked full of so many delicious veggies! Thank you for sharing this recipe, it will definitely be a keeper for me!
