Sunday Slow Cooker:  Greek Stuffed Chicken Breasts

My mind was blown last week. Did y’all know it was possible to stuff a chicken breast and then cook it in the crockpot!!? Literally stuffing it with anything and a few hours later, deliciousness. And in case you were thinking what I was, this isn’t like bad wedding food stuffed chicken breasts. These are delicious, moist, slow cooked stuffed chicken breasts. Last week in the meal plans, members got a taste of a yummy version stuffed with wild rice. Since then I have been stuffing chicken with everything you can imagine and throwing it in the crockpot – ham and cheese, today’s Greek version, wild rice with apples and sausage, spicy corn and poblano peppers with cheese – you get the idea. Today’s version was one of my favorites stuffed with spinach, olives, roasted red peppers, artichoke hearts, and feta cheese.

Slow Cooker Greek Stuffed Chicken Breasts
Servings: 6 servings
Serving Size: 1 stuffed chicken breast

  • 2 lbs. boneless skinless chicken breast (about 6 6oz. chicken breasts)
  • 3 cups finely chopped spinach
  • 2 roasted red peppers, chopped
  • 1/4 cup sliced black olives
  • 1 cup chopped artichoke hearts
  • 4 oz. reduced fat feta
  • 1 tbsp. oregano, chopped
  • 1 tsp. garlic powder
  • 1.5 cups chicken broth
  • Salt and pepper


  1. In a bowl, mix together the spinach, artichoke hearts, roasted red peppers, feta, oregano, and garlic.
  2. Season with chicken breast with salt and pepper.
  3. With a sharp knife, make a deep cut in the center the chicken breasts to create a pocket. Be careful not to cut through the chicken.
  4. Stuff the chicken breasts with the spinach mixture.
  5. Add to the slow cooker. To get all the chicken to fit, you will likely need to place them on their sides with the spinach mixture facing up, basically stacking them sideways across the bottom of the slow cooker. This also prevents the stuffing from falling out.
  6. Add the chicken broth.
  7. Cook on low for 4 hours, checking to make sure the chicken is fully cooked through.

    The ingredients list oregano, but the instructions say thyme. Not sure it make much difference, but…….

    I made this for the first time tonight. It turned out well but there was a ton of liquid left in the crockpot. Anyone else find this. Help would be appreciated. Thanks
