Peanut butter and banana is probably one of my favorite combinations out there. As a kid, my all time favorite sandwich was crunchy peanut butter and sliced bananas on toast. I could have eaten it everyday. So when thinking about what kind of oat bars to make this past weekend, it was no surprise the dark ripe bananas and peanut butter called out to me. Combined with a few other ingredients and a touch of honey for sweetness, these bars make a terrific breakfast or snack.

Ingredients

  • 1.5 cups quick cooking oats
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 cup nonfat milk
  • 1/4 cup honey
  • 1 U egg, beaten
  • 1 tsp. vanilla extract
  • 2 U bananas, mashed
  • 1/4 cup reduced fat peanut butter
  • 2 tbsp. flax seeds

Directions

  1. Preheat the oven to 350 degrees.
  2. Spray an 8 X 8 baking dish with cooking spray.
  3. Mix together the oats, baking powder, salt, cinnamon. Stir in the milk, honey, egg, and vanilla extract. Then add the mashed banana, peanut butter, and flax seeds. Stir until combined.
  4. Pour into the baking dish. Cook for 25-35 minutes until cooked through.
  5. Let cool and slice into bars.
