  • 2 tbsp. red curry paste (or more to taste)
  • 2 garlic cloves, minced
  • 1 tbsp. ginger, minced
  • 1 shallot, diced
  • 1 lb. boneless skinless chicken breast
  • 1 cup canned lite coconut milk
  • 1 tbsp. brown sugar (or Stevia to taste for low carb)
  • 1 tbsp. lime juice
  • 1 tsp. fish sauce (or soy sauce, adjust to taste)

Step 1 Heat the vegetable oil over medium high heat. Add the curry paste, garlic, ginger, and shallot. Cook for 2-3 minutes until very fragrant.
