What you need:

  • 4 boneless skinless chicken breasts (smaller breasts)
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 2 tbsp lemon pepper seasoning
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard (optional)
  • 2 tsp dried oregano
  • Salt to taste (only if needed, many times lemon pepper seasoning has salt)

Step 1 Make the marinade: Combine all the ingredients in a glass jar. Shake or whisk well. The marinade will separate in the fridge, so make sure to let it come to room temperature and whisk/shake to combine before using.

Step 2 Lightly pound the chicken if needed so that the chicken breasts are a uniform in size. For very thick breasts, I recommend slicing them in half horizontally so they cook evenly on the grill. Place the chicken and marinade in a non-reactive bowl, dish, or bag. Marinate the chicken for at least 1 hour, but no more than 2 hours.

Step 3 To grill: Preheat the grill to medium-high heat. Make sure the grill is clean, Oil grates if necessary. Remove the chicken from the marinade, letting the excess drip off. Grill the chicken for 3-5 minutes per side until cooked through with nice grill marks.

Step 4 Let rest for 5-10 minutes before serving.
