Sunday Slow Cooker:  Hawaiian Chicken

Some of my favorite slow cooker recipes are the kind that can be used in tons of different ways during the week. This is one of those recipes. You can literally use this chicken over and over again after making it and feel like it’s a new meal each time.

Start out serving it with Asian slaw and rice. The next day wrap it up in lettuce with hot sauce, water chesnuts, and cilantro for a low carb taco. Then try it out in a quesadilla with some sliced jalapenos, cheddar cheese, and sauteed peppers. Next throw it on a sandwich for a Hawaiian take on a classic pulled pork sandwich. Add some barbecue sauce and crunchy veggies if you’re feeling it. Still need more? Use it in a stir-fry with sauteed veggies and fried rice. Turn it into a BBQ Chicken pizza. Make a breakfast hash with sweet potatoes. Wrap it up into a burrito. Seriously, this recipe could be used 100 different ways.

Crockpot Hawaiian Chicken
Servings: 8 servings
Serving Size: 4 oz. chicken

  • 2 lbs. chicken breast
  • 1 tbsp. minced ginger
  • 1 cup teriyaki sauce*
  • 1 cup fresh pineapple, chopped
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce*
  • 2-3 garlic cloves, minced
  • Optional: 1-2 habanero peppers
  • *Watch the salt content of the teriyaki sauce and soy sauce since they can vary greatly. Taste the teriyaki sauce before mixing in the soy sauce and if it already tastes salty, consider leaving the soy out or adding less.


  1. Place the chicken in the bottom of the crockpot. Top with pineapples.
  2. Whisk together the ginger, teriyaki sauce, pineapple juice, soy sauce, and garlic cloves. Pour over the chicken. If using habaneros, add them whole to the crockpot.
  3. Cook on high for 3-4 hours until chicken is fork tender. Shred and cook for 30 more minutes without the lid on to thicken up the sauce..

    I made it today and it was SO SO SO salty. I used low-sodium teriyaki and soy sauces but it was still too salty to eat. Maybe it’s the kind of teriyaki sauce. What kind did you use?

      I am sorry to hear this. Personally I didn’t have that problem, but I am going to add a recipe note to watch the salt content of the teriyaki and soy sauces to make sure this doesn’t happen to others. Thanks for letting me know.
