Sunday Slow Cooker:  Creamy Chipotle Tomato Soup

Lately all I have been talking about is how excited I am for warmer weather – barbecues, sandy toes, slushy drinks…you name a warm weather cliche, I am excited for it. Except for bathing suits and soup. Yes. Soup. Sometimes there is nothing better than a big bowl of warm comforting soup and I am already bummed about saying good-bye to soup for the next few months. So for one last hurrah, I made a simple twist on a classic soup. Creamy tomato soup spiked with chipotle peppers and cream cheese for a creamy spicy take on a classic. Make up a big batch and enjoy before it’s too hot for soup.

Slow Cooker Chipotle Tomato Soup
Servings: 6
Serving Size: 1.5 cups

Ingredients

  • 2 tsp olive oil
  • 4 stalks celery, diced
  • 2 carrots, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-3 chipotle peppers with 3 tbsp. adobo sauce (adjust for your spice preference)
  • 28 oz can whole plum tomatoes, with juice
  • 4 cups vegetable or chicken broth
  • 1 bay leaf
  • 1 tsp. oregano
  • 1/2 tsp. coriander
  • 1/4 tsp. cumin
  • 8 tbsp. reduced fat cream cheese
  • 1.5 cups nonfat milk
  • Salt and pepper

Instructions

  1. Heat the olive oil over medium heat. Add the celery, carrots, and onion. Cook for 8-10 minutes until softened. Add the garlic and chipotle peppers and cook for 2 more minutes. You could skip this step but I prefer the flavor when the vegetables are sauteed first.
  2. Add to the slow cooker. Add the canned tomatoes, vegetable broth, bay leaf, oregano, coriander, and cumin.
  3. Cook on low for 4 hours. Then carefully blend using an immersion blender or by blending in batches.
  4. Return to slow cooker and add the cream cheese and milk. Cook for 30 more minutes and season with salt and pepper.

    Thank you for the many recipes, I am allergic to chicken and beef, I sub. with turkey and bison, or if I can get it venison. Also I can not have whit can sugar it is processed with bovine , beet sugars I really have to read labels. I go to Amish farm markets, they do not use GMO seeds. I have learned to can my own tomatoes, and some veg. This year I will be using my dehydrater more.
    Thank you again for the new Ideas on fixing healthy meals.
