This delicious tomato and cucumber salad is made with fresh tomatoes, crunchy cucumbers, avocado, corn, and basil for the perfect side dish.

List of Ingredients:

  • 1 lb. ripe tomatoes, chopped
  • 1 English cucumber, chopped
  • 2 ears corn, cut off the cob (optional: grill or roast it first)
  • 1 avocado, chopped
  • 1/4 cup basil, chopped (or more)
  • 1 tbsp. olive oil
  • 1 lemon, juice (or more)
  • Salt and pepper

1 Gently toss everything the tomatoes, cucumbers, corn, avocado, and basil. If using traditional cucumbers, we recommend peeling them and gently scooping out the seeds with a spoon. If using canned or frozen corn, make sure it is fully defrosted and been patted dry.

2 Add the olive oil, lemon juice, salt, and pepper. Taste and add additional lemon juice, oil, salt, and pepper as needed.
