What you need:

  • 1 lb. boneless skinless chicken breast
  • 1 lb. boneless skinless chicken thighs
  • 3/4 lbs. tomatillos, husked and quartered
  • 2 poblano peppers, seeded and chopped (use bell peppers for less heat)
  • 1 jalapeno peppers, seeded and chopped (leave seeds in for more heat)
  • 1/2 onion, sliced
  • 1/3 cup cilantro, chopped
  • 1 garlic clove, minced (more to taste)
  • 1 tbsp. soy sauce (coconut aminos for Whole30®)
  • 2 tsp. cumin
  • Salt and pepper

Step 1 Place chicken and tomatillos in the slow cooker.

Step 2 Add in your peppers, onion, garlic, cilantro, and all those flavorful seasonings. Give it a quick mix.

Step 3 Set it and forget it! Let everything simmer until the chicken is tender and shreddable (about 6-8 hours on low, 4 hours on high)
