What you need:

  • 1 cup cooked quinoa
  • 1 cup broccoli (cooked and chopped small, or other veggies)
  • 2 tbsp sundried tomatoes, diced
  • 1 cup part skim shredded mozzarella cheese
  • 6 eggs
  • Salt and pepper

Step 1 Preheat oven to 350 degrees. Whisk the eggs with the salt and pepper. Add the quinoa, broccoli, sundried tomatoes, and cheese. Whisk to combine.
