Let's Make Hoisin Pork and Vegetable Stir Fry

Ingredients

  • 1/3 cup low sodium soy sauce
  • 1/4 cup water
  • 2 tbsp. sesame oil
  • 2 tbsp. honey (leave out for low carb)
  • 3 tbsp. rice vinegar
  • 1 tbsp. lime juice
  • 4 cloves garlic
  • 1.5 tbsp. fresh ginger, grated
  • 4 tbsp. Hoisin sauce
  • 1.33 lbs. lean pork tenderloin, cut into strips
  • 2 cups cabbage
  • 2 cups broccoli florets, chopped
  • 1 cup carrots, diced or grated

Step 1Mix together the soy sauce, water, Hoisin sauce, sesame oil, honey, rice vinegar, lime juice, garlic, and ginger.

Step 2Marinate the pork in this mixture for at least 4 hours, ideally overnight. You can skip this step if needed and the dish will still come out great. The marinating just packs in even more flavor.

Step 3When ready to cook, add the pork and marinade to a nonstick skillet. Cook until pork is browned and cook through, about 5-7 minutes.

Step 4Remove pork with a slotted spoon.

Step 5Add the vegetables to the hot pan. There will be some marinade leftover in the pan.

Step 6Cook until tender, about 5 minutes, adding 1-2 tbsp. of water if needed.

Step 7Stir the pork pack in. Cook for 30-60 seconds to warm pork. Serve.
