Let's Make Hoisin Pork and Vegetable Stir Fry

Ingredients

  • 1/3 cup low sodium soy sauce
  • 1/4 cup water
  • 2 tbsp. sesame oil
  • 2 tbsp. honey (leave out for low carb)
  • 3 tbsp. rice vinegar
  • 1 tbsp. lime juice
  • 4 cloves garlic
  • 1.5 tbsp. fresh ginger, grated
  • 4 tbsp. Hoisin sauce
  • 1.33 lbs. lean pork tenderloin, cut into strips
  • 2 cups cabbage
  • 2 cups broccoli florets, chopped
  • 1 cup carrots, diced or grated

Step 1 Mix together the soy sauce, water, Hoisin sauce, sesame oil, honey, rice vinegar, lime juice, garlic, and ginger.

Step 2 Marinate the pork in this mixture for at least 4 hours, ideally overnight. You can skip this step if needed and the dish will still come out great. The marinating just packs in even more flavor.

Step 3 When ready to cook, add the pork and marinade to a nonstick skillet. Cook until pork is browned and cook through, about 5-7 minutes.

Step 4 Remove pork with a slotted spoon.

Step 5 Add the vegetables to the hot pan. There will be some marinade leftover in the pan.

Step 6 Cook until tender, about 5 minutes, adding 1-2 tbsp. of water if needed.

Step 7 Stir the pork pack in. Cook for 30-60 seconds to warm pork. Serve.
