Ingredients
1 tbsp olive oil
1 onion, chopped
1 tbsp Italian seasoning
6 garlic cloves, minced
3 cups summer squash, chopped
3 cups zucchini, chopped
3 carrots, chopped
1 cup canned corn, drained (or frozen)
32 oz. canned diced tomatoes
4 cups vegetable broth
8 oz. pasta (regular, whole wheat, or GF)
15 oz. canned white beans, rinsed and drained
3 cups fresh baby spinach
Salt and pepper to taste

Step 1
Heat the olive oil over medium heat. Add the onion and cook for 4-5 minutes. Add garlic and Italian seasoning. Cook for 1 minute.
