  • 9 eggs
  • 1/2 cup skim milk (or milk of choice)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Parmesan cheese
  • 1 cup boneless lean ham, diced
  • 2 cups cooked broccoli, diced
  • 2 green onions, diced
  • 3/4 tsp. kosher salt
  • 1/2 tsp. black pepper

Step 1 Preheat the oven to 375. Whisk together the eggs, milk, salt, and pepper. If you like a little spice, add a dash of hot sauce.

Step 2 Spray an 8 X 8 glass baking dish or pie plate with cooking spray. You can also use a cast-iron skillet. Spread the broccoli, ham, and cheese on the bottom of the pan.
