In a small container, mix together the soy sauce, honey, water, sesame oil, garlic, rice vinegar, ginger, sambal olek, and cornstarch. If you like a very saucy dish, double the sauce. Set aside.

Add the oil to a skillet over medium heat. Add the green onions and zucchini. Cook for 4-5 minutes until the zucchini is tender-crisp, don’t let it get mushy. Remove and set aside.
