List of Ingredients:

  • [Stir Fry Sauce]
  • 1/4 cup low sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp water
  • 2 tsp toasted sesame oil
  • 2 garlic cloves, minced
  • 2 tsp rice vinegar
  • 2 tsp ginger, minced (or frozen cubes)
  • 2 tsp Sriracha
  • 1 tbsp cornstarch
  • [Skillet]
  • 1 tbsp olive oil
  • 6 green onions, sliced
  • 2 zucchini, sliced into half moons
  • 1.33 lb 93% lean ground turkey

1 In a small container, mix together the soy sauce, honey, water, sesame oil, garlic, rice vinegar, ginger, sambal olek, and cornstarch. If you like a very saucy dish, double the sauce. Set aside.

2 Add the oil to a skillet over medium heat. Add the green onions and zucchini. Cook for 4-5 minutes until the zucchini is tender-crisp, don’t let it get mushy. Remove and set aside.

3 Add the turkey and cook for 6-8 minutes, breaking it up as it cooks, until it is cooked through.

4 Add the zucchini and sauce back to the pan. Bring to a simmer and cook for 2-3 minutes until the sauce thickens.
