  • 1 lb boneless skinless chicken breast, cubed
  • 1 tsp kosher salt
  • 1/2 tsp red pepper flakes (or black pepper)
  • 1 tbsp butter (or olive oil)
  • 1 tbsp olive oil
  • 1 small onion, sliced thin
  • 4 garlic cloves, minced
  • 1/2 cup dry white wine
  • 14 oz fire roasted diced tomatoes
  • 1 tsp jarred Calabrian chilies (or red pepper flakes, more to taste)
  • 1/2 tsp Italian seasoning
  • 2 tbsp fresh parsley
  • 2 tbsp fresh basil

Step 1Pat the chicken dry with paper towels. Season with salt and pepper. For extra spicy, season the chicken with red pepper flakes.

Step 2Melt the butter in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 1-2 minutes per side until just cooked through. They will be added to the sauce after, so make sure not to overcook. Remove and set aside.

Step 3Add the olive oil to the skillet. Once hot add the onions and cook for 4-6 minutes until beginning to soften. Add the garlic and chili peppers (red pepper flakes) and cook for 1 minute.

Step 4Add the wine to the pan and use it to deglaze the pan, scraping any browned bits from the bottom of the pan.

Step 5Add the tomatoes and Italian seasoning. Bring to a simmer and cook for 10 minutes or longer. It should thicken slightly. Taste and adjust the heat level if needed.

Step 6Add the chicken to the sauce and cook for 1-2 minutes.
