  • 8 eggs
  • 1/4 cup skim milk
  • Salt and pepper
  • 1/2 tbsp. olive oil
  • 1/2 cup red onion, diced
  • 1/2 cup green pepper, diced
  • 1/2 cup red pepper, diced
  • 1 cup diced lean ham
  • 1 garlic clove, minced
  • 1/2 cup shredded reduced fat cheddar cheese

Step 1Preheat the broiler. Whisk together the eggs, egg whites, milk, salt, and pepper.

Step 2Heat the oil over medium heat in a nonstick pan. Add the onions, green peppers, and red peppers. Cook for 5-7 minutes until soft. Add the ham and garlic and cook for 2 minutes.

Step 3Pour the egg mixture over the top and sprinkle cheese over top. Cook until edges are set and middle is just beginning to firm up, about 4-5 minutes.
