Turkey Taco Lettuce Wraps

- 1/4 cup onion, minced
- 2 garlic cloves, minced
- 1.33 lbs 99% lean ground turkey
- 2 tbsp taco seasoning
- 14 oz canned diced tomatoes, drained (Rotel for spicier, recommended)
- 1 head butter lettuce (or Romaine)
Heat a skillet over medium high heat. Add the onions and garlic. Cook for about 5 minutes until beginning to become tender. Add the ground turkey. Cook, breaking it up as it cooks, until no longer pink. Add taco seasoning and diced tomatoes. Bring to a simmer and cook for 3-5 minutes, as the sauce thickens. If needed you can add cornstarch, flour, or coconut flour to thicken up the sauce.
Divide the turkey mixture among the lettuce leaves. Top with all your favorite toppings.
