What you need:

  • 4 corn tortillas
  • 2 cups cooked boneless skinless chicken breast, shredded
  • 2 limes, juice
  • 1/4 cup cilantro
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp chili powder (optional)
  • Salt and pepper
  • 1 cup canned nonfat refried beans (or homemade)
  • 1 cup lettuce
  • 1 cup tomatoes, chopped
  • 1/4 cup red onion, chopped
  • 1/4 cup queso fresco (or shredded cheese)
  • 1 avocado, sliced
  • 1/4 cup salsa (your favorite)

Step 1 Preheat the oven to 400 degrees. Place the tortillas on a baking sheet or directly on the oven rack. Cook for about 4 minutes on each side until they are crispy.
