Slow Cooker Sesame Ginger Chicken

What you need:

  • 2 lbs boneless skinless chicken breast (or thighs)
  • 1/2 cup low sodium soy sauce
  • 1/4 cup honey (double for a sweeter sauce)
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice wine vinegar
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced (doubled for more ginger flavor)
  • 2 tsp Asian garlic chili paste (like sambal olek, optional, to taste)
  • 1 tbsp cornstarch
  • 2 tbsp water

Step 1 Mix together the soy sauce, honey, sesame oil, rice wine vinegar, garlic, ginger, and sambal olek.

Step 2 Cook on low for 3-4 hours until the chicken is fully cooked. Remove from the slow cooker and slice or shred.

Step 3 Mix together the cornstarch and water. Add to the slow cooker and whisk into sauce until smooth. Add the chicken to the slow cooker and cook on high until sauce thickens.
