Asian Quinoa Stir Fry

What you need:

  • 3 cups cooked quinoa
  • 2 tsp coconut oil, melted, divided
  • 2 tsp sesame oil
  • 6 scallions, chopped
  • 2 cups green cabbage, chopped
  • 1 cup broccoli, chopped
  • 1 cup snow peas, chopped
  • 1 red pepper, chopped
  • 1/2 cup carrot, diced
  • 4 cloves garlic, minced
  • 2 tsp fresh ginger, minced
  • 4 tbsp soy sauce (or coconut aminos for GF)
  • 1 tbsp maple syrup
  • 1 tbsp almond butter
  • 1 tsp Sriracha (optional)

Step 1 Stir together the soy sauce, maple syrup, and almond butter. Set aside.

Step 2 Add the coconut oil and sesame oil to the hot pan. Add the scallions, cabbage, broccoli, snow peas, red pepper, and carrots. Cook for 6-8 minutes until they just begin to soften. Add 1-2 tbsp. of water if needed.

Step 3 Add the garlic and ginger. Cook for 1-2minutes until fragrant.

Step 4 Add the cooked quinoa and cook for about 5 minutes. Stir as needed, letting the quinoa get slightly crispy.

Step 5 Stir in the sauce. Taste and season as needed.
