Ingredients

  • 2 lb boneless skinless chicken thighs (or breasts)
  • 2 canned chipotles peppers in adobo sauce, minced (or to taste)
  • 2 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 4 garlic cloves, minced
  • 1 onion, quartered
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 bay leaf
  • 1/3 cup low sodium chicken broth
  • Salt and pepper

Step 1 Season the chicken with salt and pepper and place in the crockpot along with the onion, garlic clove, and bay leaf.
