Ingredients

  • 1 tbsp olive oil
  • 2 lbs lean pork loin roast, trimmed
  • Salt and pepper (kosher)
  • 1 cup cranberry sauce (canned or homemade, whole berry, I used Trader Joe's)
  • 1/4 cup low sodium chicken broth
  • 1 tbsp honey
  • 1 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1 tbsp cornstarch

Let's Watch Slow Cooker Cranberry Pork

Step 1 Heat the olive oil over medium high heat in a heavy skillet. Season the pork liberally with salt and pepper. Sear on both sides, about 3-4 minutes, until browned.

Step 2 While the pork is searing, mix together the cranberry sauce, chicken broth, honey, apple cider vinegar, and garlic.

Step 3 Add the pork to the slow cooker. Pour cranberry sauce on top. Cook on high for 2-3 hours or low for 4-5 hours until the pork is cooked through, around 160 degrees.

Step 4 Remove the pork and let it rest for 5 minutes. While the pork rests, mix together the cornstarch with just enough cold water to make a slurry. Pour into the slow cooker and cook on high for 5 minutes until the sauce thickens.
