- 1.33 lbs boneless skinless chicken breast
- Salt and pepper
- 1 tbsp olive oil
- 1 tbsp fresh rosemary, minced (leaves only)
- 2 garlic cloves, minced
- 1/4 cup low sodium chicken broth
- 2 tbsp lemon juice
- 2 tsp honey (optional)
- 1 tbsp melted butter
Preheat the oven to 400 degrees. Season the chicken with salt and pepper. Make sure the chicken breasts are a similar thickness, if needed slightly pound the chicken in the thickest part.
In a small bowl. combine the rosemary, garlic, chicken broth, lemon juice, melted butter, and honey.
Heat the olive oil over medium-high in a heavy, oven are skillet. Sear the chicken for 2-3 minutes on each side, until browned.
Pour the sauce over the chicken. Place the skillet in the oven. Cook for 14-18 minutes (depending on thickness) until the chicken reaches 165 degrees. Halfway through cooking, open the oven and baste the chicken with sauce. Serve with extra lemon slices.
