Sauteed Shelled Edamame

What you need:

  • 4 cups shelled edamame
  • 2 garlic cloves, minced
  • 1 tbsp coconut oil (or sesame oil)
  • 2 tbsp low sodium soy sauce
  • 1/4 tsp black pepper (more to taste)

Step 1 Add the frozen edamame to a strainer and run under water for a couple of minutes to lightly defrost. Shake or pat off any excess water. If you want the edamame to get browned and crispy, make sure it is dried well.

Step 2 Heat the sesame oil in a skillet over medium-high heat. Add the garlic and cook for 30-60 seconds until fragrant.

Step 3 Add the edamame and saute for about 3 minutes until beginning to brown lightly.
