Let's Watch Roasted Fingerling Potatoes

Step 1 Preheat the oven to 400 degrees. Prepare the potatoes: Wash the potatoes and dry them well. Cut the potations in half lengthwise, leaving the skin intact. If there are any very large fingerling potatoes, cut them in fourths.

Step 2 Toss the potatoes with olive oil, salt, garlic powder, and black pepper. See notes below for additional seasoning options.

Step 3 Place cut side down on a baking sheet, making sure there is some space between the potatoes. They shouldn’t be crowded on the pan.

Step 4 Roast for 30 minutes until a nice, brown crispy edge has formed on the cut side of the potato. Carefully flip the potatoes over and cook for 5-10 minutes until tender. Taste and season as needed.
