Step 1Preheat the oven to 400 degrees. Prepare the potatoes: Wash the potatoes and dry them well. Cut the potations in half lengthwise, leaving the skin intact. If there are any very large fingerling potatoes, cut them in fourths.
Step 4Roast for 30 minutes until a nice, brown crispy edge has formed on the cut side of the potato. Carefully flip the potatoes over and cook for 5-10 minutes until tender. Taste and season as needed.
