  • 1/2 cup almond butter (or peanut butter, cashew butter)
  • 1/2 cup canned pumpkin (not pumpkin pie filling)
  • 1 egg
  • 1/3 cup pure maple syrup
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 1 tsp pumpkin pie spice (optional)
  • 1/2 tsp baking soda
  • 1/8 tsp kosher salt

Step 1Preheat the oven to 350 degrees. In a medium sized bowl, mix together the almond butter, canned pumpkin, maple syrup, egg, and vanilla extract.

Step 2In a small bowl, mix together the cocoa powder, pumpkin pie spice, baking soda, and salt. Then stir the dry ingredients into the wet ingredients.

Step 3Pour into standard muffin tin and cook for 20-25 minutes until cooked through. Let cool for 15 minutes. These can also be made in an 8 X 8 baking dish. Please note, this is a fudgy, flourless brownie so the center will deflate a bit as the brownies cool.
