Mexican Cucumber Paletas

- 1 English cucumber, peeled and sliced
- 4 kiwis, peeled and thinly sliced
- 1 cup water
- 2 limes, juice (more to taste)
- 1/4 cup sugar (or honey, agave)
Add cucumber, half of the kiwi slices, water, lime juice, and sugar to a blender. Blend until smooth.
Divide the remaining kiwi slices among the molds and then pour in the kiwi cucumber mixture.
Insert the popsicle sticks. Freeze for at least 6 hours (preferably overnight). To serve, run molds under warm water for 10 seconds, then carefully remove popsicles from the molds.
