8 eggs, beaten
Salt and pepper
2 Roma tomatoes, seeded and diced
1/2 cup white onion, diced
1 jalapeno, diced (adjust to taste)
1 cup machaca (excess liquid squeezed out)

Step 1
Add the olive oil to the skillet. Add the onion and jalapeno. Cook for 4-5 minutes until beginning to soften.

Add the tomatoes. Cook for 2 minutes.
