This hearty Kale and Quinoa Salad with honey lime dressing is packed with healthy ingredients, super filling from a combination of quinoa and edamame, and tossed with the most delicious honey lime dressing.

What you need:

  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey (or maple syrup for vegan)
  • 1 tsp Dijon mustard
  • 1/4 tsp pepper
  • 1/4 tsp salt
  • 6 cups kale
  • 1 apple, diced
  • 1 cup cooked quinoa
  • 1 cup shelled edamame
  • 1 cup cucumber, diced
  • 1/2 cup tomatoes, diced
  • 1/4 cup dried cranberries
  • 1/8 cup pumpkin seeds

Step 1 Mix together the lime juice, olive oil, honey, mustard, salt, and pepper to make the dressing. Massage half the dressing into the kale. Let rest for 10 minutes to soften while you prep the other ingredients.
